Pantry Challenge muffins

This bowl of…ummm flakes did not look like a very auspicious beginning but with a few more ingredients…

1 1/2 c. flour
2/3 c. firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt
2 egg whites (I’m just going to use a whole egg)
1 1/2 c. skim milk
1/4 c. oil
3 c. Post Bran Flakes
1/3 c. raisins (I have some nice, dried cranberries that I’m throwing in)

Heat oven to 400 degrees F. Mix flour, brown sugar, baking soda, cinnamon and salt in large bowl. Beat egg whites in small bowl; stir in milk and oil. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins.
Spoon batter into greased muffin pan, filling each cup 2/3 full. Bake 20 minutes or until golden brown. Serve warm. Makes 12.
