Hi ho, hi ho…

Yes. 
I know.
It’s mean to put that song in your head but it’s Monday and sometimes I get a bit crusty.
I’m on Week Three of making my own coffee each morning (I grind the beans and set things up while I make dinner the night before) and bringing a great breakfast with me. 
It really seems to be working. 
I am saving oodles of money. 
I’ve had the same $20.00 bill in my wallet for a week. 
I’ve even got the husband bringing a thermos with him each day. 
He’s thrilled.  How do I know?  He filled it himself the other day without prompting.
This is great. 
We used to do this pre-small one but admittedly we went into survival mode for the past year.
So what to eat?
How about a breakfast bar?
Not one of those packaged ones that taste like sawdust and you’d need 10 to actually fill you up but an actual bar with some heft to it.
I’ve got:  4 mashed bananas (these were black and I froze them awhile ago), 1/4 cup coconut, 1 cup oatmeal, 1/4 cup pumpkin seeds (or sunflower seed), 1 1/2 cup flour, 1/2 tsp. baking powder (I don’t want them light but I don’t want a bar of lead either), 1/2 cup flax seeds, 1 cup raisins, 1 tsp. cinnamon, 2/3 cup maple syrup, 1 egg and 1/2 cup butter.
Now, my butter had been out for quite some time and was super soft so I was able to just bung everything together.  If yours isn’t then cream the butter in with the seeds, raisins and bananas, add your egg and maple syrup and THEN add the flour and baking powder.
Turn into a buttered 9X11 pan and bake for 30 at 330 or until firm.
Cut into bars and wrap for the week.

  7. Yummy! Sounds so good. Your mix-ins are fabulous! I usually make granola bars. (They make awesome healthy to-go snacks, and I adore sending them for my first grader's school snack.). Recipes like this are highly useful!

  8. Oh, and, do you ever make cappuccino at home? I'm just getting into that. I'm so addicted to them, and they are way too expensive out of the house. I have to tell you that our little Mr. Coffee Espresso/Cappuccino machine is saving our family a small fortune! It was under 40 dollars, too! (I read a ton of reviews that were positive, and then we just quit saving up for that fancy espresso maker!). ;)

    We love ours too but tend to only use it on the weekends.

    It's a little scary how much extra money I have at the end of each month just by being mindful of coffee purchases.

  10. It's mostly a weekend thing here, too! My 11 month old gets very freaked out by the sound of the steam, so it helps to have my hubby on hand to whisk her away! :).
