Getting ready for Spring #2

Welcome back!  Hope that sunny weather has found you wherever you are and I’m so glad that you’re here today to share.
Just before we get to my happy place this week and and the party I’m going to remind you that I’ve got my Gracious May giveaway, tomorrow is the last day.
How about a really nice (and light) that is chockfull of greens?
I started with 2 small leeks and 1 clove of garlic and sauteed them in 1 T. of oil. 
I added 2 T. of chopped parsley…
the zest of 1 lemon and 3 medium potatoes (peeled and cut into chunks).

Add 4 cups of chicken broth (you can use veg stock instead if you’d like).

Cook until the potatoes are tender (about 20 minutes) and add 4 cups of fresh spinach.

Let wilt and blitz with handblender (or pour into regular blender or food processor) and add salt and pepper to taste.

Serve with a toasty crouton.
