Food Waste Friday and a great dip!

And my food waste this week (drumroll please)…..
I know. 
 I’m sort of shocked too. 
I had some fruit that gave me a run for my money but they begged for mercy when whizzed into smoothies.
Because of that I don’t even have any leftovers to contend with and instead of posting twice today I can just show you my last bridal shower dish.
I made a ‘Mexican’ layer dip but bitesized it and I can’t believe how easy it was and how quickly it disappeared!
I started with a creamy layer; 1 1/2 cups sourcream mashed with 3/4 cup goat cheese (don’t like the tang? use cream cheese instead), 1 tsp chilli powder and 1/2 tsp. cumin.
I made a simple quacamole using; 4 avocados, juice and zest of one lemon, fresh pepper, a shot of hot sauce, a shot of worstershire and 1 garlic clove mashed.

I got 3/4 cup of sharp cheddar grated and opened a jar of salsa that I’d made last summer.

I made two sizes (one in martini glasses and one in little shot glasses-both were gone almost instantly).
Start with your sourcream layer (2 T. is lots) then quacamole (1-2 T).
Add in a layer of salsa and sprinkle with cheese.

I placed them all on tiers of a pie stand that I hardly ever get an excuse to use and served with both tortilla chips and crudite (which no one ate C:).

    Wow, I can see how they were gone so quickly- they look amazing! And thanks for always throwing in easy substitutes like cream cheese vs. goats cheese- since I just can't take the tang. 😉
