Getting Ready for Spring #5

Happy Saturday, Happy Easter Weekend and Happy Party Day!
So very glad that you’re here.

This party might not be big but it’s small
 (totally ripped that off of ‘Vinyl Cafe’)
How about a cup of soup for lunch?
This soup would be great hot or cold.
We’re shovelling a mound of dirt in an attempt to reclaim our front yard and a cup of something warm and fresh sounds just about right.
I’ve got 1 bunch of carrots, 2 cloves of garlic, 3 parsnips and 2 oranges. 
Toss with 1 T. oil and roast until soft. (350 for about 20 minutes)
I know, not attractive yet but give it a second.

Place in a large pot with 4 cups of chicken stock and whizz the whole thing with a handblender (or regular blender or in a food processor).
Taste for salt and pepper and…

Now that is actually pretty.

    Oh, gosh…those carrots and parsnips look FABULOUS roasted!!! I could eat them right now… and I need too…all this EAster sugar is bringing me DOWN!!!
