Grumpy.
How about something that resembles pizza but has lots of vegetables hidden in it and doesn’t cost me the takeaway prices and grease.
Upside down Pizza
I found the original of this recipe as an advertisement in a Rachel Ray Magazine and I no longer can find it. I think that it was for Ragu.
Here’s my version which can be made ahead of time (reheat to eat in a hurry) or make quickly with toddler help and with the help of a snack while it is cooking will avert the witching hour freak-out.
Take 1 lb of ground beef and brown with; 1 garlic clove and 2 small zuchinni cut up (OR use a head of brocolli OR use peppers and mushrooms OR any other veg you would like to trick your family into eating).
Place in a baking dish (9×11) and top with 2 cups of tomato sauce.
Layer on shredded mozzarella (1 1/2 cups).
And finally a topping of pizza dough (you can just use a prepared ball from the grocery store or here’s a recipe)
Bake 30 minutes until browned and bubbly (330 degrees).

Yup, we definitely have one of those hours, just after Hubby gets home. The kids get whiny and cranky and it's very hard to cook when a 2 year old is trying to climb up your legs, crying and fussing..and a 4 year old is in the fridge trying to eat anything he can get his hands on.
