So how did I get leftover ham for my Green Eggs and Ham muffins?
Yep, that was yesterday’s fun recipe inspired by the amazing Megan over at ‘Crafty Conundrum’. Have you had a chance to visit her yet?
Go do that now. There’s time to pop back here, this is a slowcooked recipe.
Well, I made a slowcooked ‘Ham and Black-eyed Peas’.
This is comforting.
I made it in the oven since I knew I was going to have it on for a long time (2 hours) but next time this all goes into the slowcooker.
I also used ham hocks which are difficult to find. You can use a ham bone or just a small ham instead.
In my pot I’ve got; 1 rib celery, 3 garlic cloves chopped, 1 T. whole coriander, 2 1/2 cups of black-eyed peas and two ham hocks.
Add 4 cups of chicken stock and bake.
Serve with a nice chunk of bread and get ready for dreamy leftovers if you are very lucky. C:

That does look amazing. I tried black eyed peas for the first time a couple months ago and loved them.
