I alluded to this recipe awhile ago when I had a cocktail party before we all went out for dinner for the husband’s birthday.
I was trying to think of something unique that I could make ahead of time AND something that would be fairly healthy. This isn’t usually chicken wings. Usually those are deepfried and eaten after several pints only to be regretted the next day as they sit like a lead weight in your tummy.
They are a great finger food though and I wanted to play with them a bit.
Why not make them into an appetizer version of one of my favourite chicken dishes, Chicken Parmesan?
I took; 1 cup flour, 1 cup shredded parmesan (I used a big block of fresh, it really is nicer and is super cheap at most big warehouse stores like Costco), 1 T. dried basil, 1/2 tsp granulated garlic, pinch of black pepper and 1/2 cup of coarse cornmeal.
I dipped my chicken wings in an egg wash of 3 eggs and 2 T. water.
Dregged them in the parmesan mixture.
Laid them out on a cookie sheet that had a silicone sheet on it (don’t have one? line with foil or parchment paper).
Then I baked them for 20 minutes at 375 (just keep an eye on them, every oven is different) and served with a marinara sauce.
Crispy, light and totally delicious.
Next time I’m going to bread an enormous batch of them and cook them as we want them.
Just a total treat and something I wouldn’t even feel guilty about serving for dinner.
