Chocolate, chocolate, chocolate…

I love nutella.  I really, really do.

I love baking with it.

I love it on bread.

I love it for a few sneaky tastes on its own…

you get the idea.

I’m not really thrilled with the amount of sugar in it though and so I thought it would be a good idea if I gave it a go on my own AND my favourite nuts are almonds so I was able to do a little changeroo there as well.

Shockingly easy and I’m pretty happy with its ‘healthiness’. 

No, this isn’t an everyday treat but it is yummy and fun.

It’s also a super gift.  I’ve made it a couple of times in the past few weeks and folks are coming back for more already.

Ok, I’m an enabler.

I started with 3 cups of whole almonds and I toasted them in the oven until they were slightly browned.  Let them cool for a minute and process until fine crumbs. Add: 2/3 cup cocoa, 3/4 cup coconut oil, 1/4 cup cocoa nibs, 1 tsp vanilla, dash sea salt and 3/4 cup maple syrup. Blitz and then blitz some more. 

Then blitz longer until you think your mixture will never resemble regular nutella. Delicious!

I call it ‘Almontella’.

I know-right.

    This is one of those ideas that’s so simple and so brilliant, I almost can’t believe I didn’t think of it myself. Well, I didn’t have to. You did it for me! Could it be possible to have something like this that you can eat right out of the jar almost guilt free? Genius, my friend, just genius.
