Christmas Morning Take 2

This is my second choice for Christmas breakfast but I think it will also become a regular at dinner time.

Breakfast Pizza.

Eek!

After BBQ Chicken Pizza and Chocolate pizza the last few weeks I hope that you’ll let me have just one more.

I started with a muffin pan and I turned it upside-down. A package of prepared puff pastry rolled out to 1/4 inch thick got laid over the top.

I added a thin layer of shredded mozzarella and a tomato that I roasted in the oven (totally optional, you could add mushrooms etc, etc).. chunks of crispy bacon, dots of chevre and an egg broken into the indentation in between the muffin cups… finally 1/3 cup of shredded mozzarella. Bake in the oven at 425 degrees for 20 minutes until the eggs are set and the puff pastry is golden brown.

Small one ate two pieces of this and made her yumy sounds the whole time she ate it.

This is huge for a toddler.

She even didn’t complain when we paused “How To Train Your Dragon” while we ate.

Admittedly, I felt much like a rock star.

    I love reading your how to’s on cooking. This sounds really good! Bascially anything with an egg sounds good. :D We are going to have to give this a go for our children.
