How do you celebrate your Christmas morning?
We like lots and lots of lattes, champagne, fruit and a special pastry or two (ok, honestly-three).
I am already crazy for pain au chocolate but how about one made with chocolate puff pastry?
I don’t usually make puff pastry (only about once a year because it is a bit on the labour intensive side) but it is Christmas and this year I decided to cut down on a lot of baking so it was time to pull out all the stops.
I’ve got 4 1/2 cups of flour and 1/2 cup of cocoa to which I added 2 cups of water and…
the folding procedure, I actually have step-by-step pictures for from my last foray into puff pastry and you end up with…
yep, luscious dough with chunks of butter.
That spells Happy Christmas to me.
I took a 1/4 of the dough and rolled it out 1/4 inch thick and slice it into 4×3 rectangles.
I added three blackberries, 1/2 oz of really good chocolate and a teaspoon sprinkle of sugar.
Roll, tuck under the seam and lightly press the ends and sprinkle the tops with sugar.
Bake for 15-20 minutes at 415 degrees and try to hide enough for Christmas morning.
