Yesterday I talked about lots of company this week.
You see small one turns three.
Today.
This is her on last week’s cruise having an early birthday cake.
I’m totally not sure where the last three years have gone.
She grows and changes every moment and I suppose I’m like most parents who are happy to see their child so healthy and curious but at the same time wanting to slow the whole process down.
I’m really not sure how I got so lucky to have this wee one as a part of my life but I wouldn’t trade a second of it for anything.
We have a lot of folks that want to celebrate with us and I got this treatie ready in advance.
Marinated feta is a super favourite of mine, you can make a big batch of it and bring it out whenever you want a nice snack.
Start with a pretty jar (you can use this for serving) and fill it with chunks of feta (about 2×2 inch cubes).
Add; 2 T. pink peppercorns, 3 sprigs of thyme, drizzle in 2 tsp. honey and 2 cloves of garlic .
Fill with a high quality olive oil and pop into the fridge.
The longer that it is left the better it will taste.
Serve with a crusty bread and good people.

We used to buy this cheese from Ireland called boilie cheese, and it was very similar to this. This is brilliant! If I make it for my husband, he’ll be so happy. We enjoyed it with toasted baguettes. I also want to try the baked figs. Yum! Sometimes we like appetizers for dinner and nibble and watch a movie on Apple TV.
