Last week I had a nice feta spread on the blog and promised a great bread to go with it.
I think that I really cracked it with this one.
I imagine having this bread on picnics beside a nice lake with jars of lemonade and endless time to just enjoy the day.
It isn’t my reality at the moment BUT we can cosy ourselves in the house and watch “A Room With A View” and think of Italy.
I started with; 1 1/2 cup water, 1/4 cup honey and 2 tsp yeast and let things proof.
I added 1/2 cup water, 1/4 cup oil and 3 1/2 cup flour.
Knead together to a smooth dough.
Place on a silpat lined cookie sheet and flatten it down to a rectangle a 1/2 inch thick.
Top the centre with; 4 oz crumbled feta, zest of a lemon, cracked pepper, 3 garlic cloves (chopped) and 1 tsp. dill.
Snip the sides (3 inches in, 2 inches thich and on an angle) and draw one side into the middle, go to the next strip and do the same, all the way down.
Bake at 375 degrees for 30 minutes or when tapped on the bottom it sounds hollow.
Serve on its own or with the feta spread but most importantly with good friends and happy moments to share.
