Oh Friday, how we’ve waited for you.
It’s cold here.
I mean, cold.
I mean, -40 with the windchill.
Just getting anywhere is a lot of effort.
Deciding what to wear based upon the amount of layers that you can pile on.
Plotting the least amount of time spent outside of our cosy house.
Friday, we’re ready for you.
And a treat.
I’m lucky enough to have an awesome fish market less than five minutes away from my house.
Totally spoiled-I know.
They have the freshest mussels going and tonight is the night.
Get a lb./person if you are eating them as a main course and LOTS of crusty bread.
I’m trying something a bit different than my usual here (love these Thai ones but we usually go for the basic white wine version) by adding another favourite food;
BACON
Saute; 1 onion (chopped), 2 garlic cloves (mashed) and 3 pieces of bacon (chopped).
Cook the mixture until the onions are soft and the bacon is beginning to crisp.
Add in your mussells (I’ve got 3 lbs. here-washed and any that are open discarded). Give it a quick stir (turn the heat to hight) and add; 2 cups chicken stock and 1 cup white wine.
Give everything a quick stir and put the top on let steam until the mussells are open (approx 3-5 minutes).
Stir in 1 T of butter and 1/2 cup chopped parsley.
