I took the most wonderful holiday last week on a sublime cruise around the Caribbean and I feel VERY pampered.
Today I’m back to my students and five feet of snow.
I bet you can guess which of the two I’m enthusiastic about.
But let’s think of food instead.
Like cookies?
Have lots of company dropping in?
Us too.
I love it-we’ve got guests three times this week.
I totally do but I also want something to offer everyone and I still haven’t managed to build that 28 hour day.
I’m working on it still.
In the meantime, here is a great slice and bake cookie recipe that my husband loves so much that he will even do the laundry without prompting.
Sort of a miracle.
I like to make a big batch and have two rolls of these in the freezer ready to slice and bake at a moments notice.
Start by soaking; 2 cups of raisins in 1/2 cup rum until plump.
Beat together; 1 1/2 cup sugar with 2 cups butter.
Fold in the raisins (squeeze the rum out) along with; 1 1/2 cups coconut (I like large flake), zest of one lemon and 4 cups flour.
Divide into two and place each half on a piece of plastic wrap.
Roll and freeze until you need a cookie fix.
Slice(1/2 inch thick) and bake at 350 degrees until browned and crisp (about 12 minutes).
















Great idea to have these in the freezer! I never think of that. Hmmm…we should come up with a series of freezer items that can be quickly done up for guests. That would be really fun for the holidays next year.
