Thursday Night Treat

I’ve got another Friday night treat for you tomorrow that I promise will take you 5 minutes to make but let’s think about Thursday right now.

In my Uni days, Thursday was the night to go out and sow more than a few wild oats.

Friday classes were notoriously empty and had a certain hazey quality to them.

Now however, Thursdays mean the week is still rolling, the weekend is still a ways away, laundry is officially piled up and I’m usually out of dinner ideas.

BUT this recipe makes me think I’ll like Thursdays again.

Cornmeal Waffles with Chicken Chilli

(ready in 15 minutes even with my little helper)

Take 1 can (14 oz) kidney beans and mix in: january 003

2 cups rotisserie chicken meat, 2 tsp chilli powder, 2 tsp cumin, 3 chopped galic cloves, 1 cup fresh tomatoes (you’ll see I had cherry ones so I just squished them), 1/2 cup green salsa. january 005

Let simmer while you make the waffles.

Mix; 3 eggs, 1/2 cup oil, 1 1/2 cup milk, and fold in 1 cup cornmeal, 1 tsp baking powder, 1/2 tsp baking soda, 3/4 cup shredded cheese and 3 cups flour (makes 6 waffles). january 008

    We always had our fraternity and sorority swaps on Thursday night, so if you were dumb enough to have signed-up for a class that met in Friday morning, you’d walk into class and you could smell alcohol on folks…everyone reeked! :/
    Hey, you’ll never believe….I actually roasted a whole chicken tonight…for the first time!!! Yay, me!
