Happy Valentines’ Week!
Yesterday you saw the amazing tablescape that Janel from Nellie Bellie created for this family friendly meal and the finished dishes. Today, is the first of three days telling you exactly how to recreate this meal for you and yours.
I’ve made these tortellini skewers so many times that they don’t even feel like a recipe anymore.
I’ve got some very sweet tomatoes to put on them this time but I’ve added; chunks of salami, olives, peppers, boccacini…whatever antipasto fixings that you love and have on hand.
I’ve cooked up; 2 cups of tortellini.
Cool down under running water and dress with; 1 tsp sugar, 1/4 cup balsamic, 1/8 cup really good olive oil, 1/2 tsp crushed chillies, 1 tsp sesame seeds and 1 T grated parmesan.
Let the mixture sit for a minimum of 30 minutes, then thread onto skewers.
For a crowd I like to lay them all out on a nice platter.
They will disappear before your eyes.
