A bit of time each year to ponder…
I’m not a hearts and flowers (ok, I love the flowers) kind of gal.
Love to me is someone that is steady.
Someone that you can lean on when you need them.
Someone that will be around during the good and the bad.
Someone who remembers the good stuff but also slogs it through laundry, snow shovelling and paying bills.
Someone who is in it for the long haul.
Wow, that’s a lot of introspection.
Snap out of it.
A bit of chocolate is needed.
How about a super chocolatey treat?
One that has SO much dark chocolate in it that you could almost fool your self that it is healthy for you.
I won’t correct you C:
I’m calling these ‘Long Haul Cakes’, they are special enough to treat the one in your life that is in it for the forever.
In a double boiler melt together; 350 grams dark chocolate and 250 grams butter.
In a bowl beat until pale yellow and thick, 7 eggs yolks and 1 1/2 cup sugar.
Fold in the chocolate mixture, 1/2 tsp almond extract and 1 cup almond meal (aka ground or flour).
In a separate bowl beat to stiff peaks, the whites.
Fold into the chocolate carefully to avoid deflating the whites.
Butter and coat with sugar 12 large muffin tins.
Fill each to 3/4 with your batter
and bake at 350 for 15 minutes or until JUST firm.
