How about a healthy one too?
I made these a week ago and have been asked every night since to make them again.
We love ‘Chinese’ food in this house.
Totally adore it.
What I don’t like is paying $70.00 for takout and then all the guilt to go with it so lately I’ve been trying to make a few of our favourite dishes at home for a fraction of the cost and as healthily as I can.
These are really quick and I think that they are right up there on the healthy scale.
‘Chinese’ Chicken Lettuce Wraps
Get everything gathered and ready to go.
In a bowl combine; 3 garlic cloves, 4 T sweet chilli sauce, 1 inch nub of ginger (grated), 1 T sesame oil, 1/8 cup sesame seeds and 1/4 cup soy sauce.
Get ready: 1 head of kale (2 cups), 1/3 cup chopped parsley and 2 packages of udon noodles.
Stirfry together; 1 lb. ground chicken and 1 chopped yellow pepper.
Add all the other ingredients once the chicken is cooked through.
Let the kale wilt and the noodles absorb the sauce.
Place in romaine or butter lettuce cups and enjoy the start of your weekend.
