I usually finish work before DH does so I pick up small one from daycare and we toodle home together.
We chat about the day and when we get home we have a snack and continue to talk.
I often make us a pot of tea and usually we make a treat.
Small one often has deep thoughts.
She’s not a huge sweets fan but the other day she asked for chocolate chip cookies.
I wanted to try something new so these yummies were created.
I’m trying tone in the moment as much as possible, especially after a day at work.
I worry that if I don’t make a conscious effort that these times will be gone before I know it.
Make some cookies with your sweeties and have a chinwag while you do.
- 1 cup butter
- 2/3 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- Dash vanilla
- 1 cup dark chocolate chips
- 1 cup coconut
- 2 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 T crystallised ginger
- Cream the sugars and butter together. Add vanilla, eggs, coconut, ginger and chocolate. Mix in flour, baking powder and soda. Form into golf ball sized pieces and cross cross with a fork. Bake at 350 for 12-15 minutes.
Cream together; 1 cup butter, 2/3 cup brown sugar and 1/2 cup white sugar. Add in two eggs and a dash of vanilla.
Add 1 cup each; dark chocolate chips and coconut.
Fold in 2 1/2 cups four, 1 tsp baking soda, 1 tsp baking powder and 2 T. crystalized ginger.
Form into 24 balls and create a crisscross patter with a fork.
Place on a silpat (or parchment) lined cookie sheet and bake at 350 degrees for 15 minutes.
You want them to be soft still when you take them out.
