June is the start of true summer here.
The time for local produce to start to truly shine.
Today is also the day that I’m sending out my second newsletter.
I had a ball putting it together.
It’s like my blog but a mini-magazine version, a little extra thing that I can offer you as a reward for coming and visiting me here.
Because that is awesome and so are you.

June is the start of monthly flavour themes.
You see, I love local produce and try to cook as much as I can in season.
So I thought…how about showcasing a different flavour each month?
Sound like fun?
How about a Monday Morning Muffin to really kick things off?
I’m actually pretty chuffed with these. You see, I’ve tried for YEARS to make a strawberry muffin that showcases the amazing flavour of this perfect berry. Instead I’ve had mushy muffins that are eaten almost out of pity.
But no more.
I made a sort of quickie jam to place in the centre that took just enough moisture out of the mix to make the muffins intensely strawberry flavoured.
For a garnish I notched my strawberries with a ‘v’ before slicing them and they turned into pretty hearts.
Toasted, chopped almonds add a bit of bit and a welcome depth to the flavour…
A nice cup of ginger tea and a slab of butter round things off.
