Oh, I know. I like pie. You know that too if you read this blog very often.
However, I’ve never been a huge fan of strawberry pie.
It just doesn’t do it for me.
It seems to lose some of the brightness of the berries, maybe because of the long cooking time.
But I’ve a solution.
Small hand pies that cook quickly and have crunchy granola in them too.
I started with a bit of sugar, sliced berries and granola.
I fought off small one from eating the filling while I cut 6 inch circles (16 of them) out of enough pastry for two, single crust pies. Need a pastry recipe? Here you go.
Six of the circles got strawberries. The others created the tops and I pinched the two together to look a bit like flowers.
Little slashes on the tops for the moisture to escape and 15 minutes in the oven.
I wanted to serve them with icecream but half of them disappeared before they were plated.
I think that makes them perfect picnic food too.
I saved a few for a plated dessert but they are cute just on their own too.
Their only flaw…they are eaten darn quickly.
Grab them while you can.
- 2x9 inch pie crusts (cut into 16, 6 inch circles)
- 1/2 cup sugar
- 2 1/2 cups chopped strawberries
- 1/4 cup granola
- Mix granola, sugar, strawberries and sugar together. Divide amongst six of the pastry circles. Top with the other six and pinch together. Slash the tops and bake at 350 for 15 minutes.
