Need a nice drink to help you celebrate the month?
How about a mojito? This is one of our most favourite summer drinks.
Due in part to my less than judicious planting of mint a few years back (it’s everywhere) and the fact it is so incredibly refreshing.
Now I’m going to give you the recipe for the adult version of it but if you want to simply omit the rum-you’re still in for a fab treat.
Small one likes hers with an umbrella straw. Well, doesn’t an umbrella straw make everything lovely?
I’m making this in a cocktail shaker but a big glass will work just as well.
The real trick is to mash everything together. The mint releases all of its flavour, the strawberries let their juice go and the sugar and rum create a terrific syrup.
I really like to add the juice of 1/2 a lemon just to add a bit more brightness. Fizzy club soda finishes the whole thing off. I would strongly encourage you to have these often and with lovely people.
A bowl of tortillas and another of salsa would make things even nicer.
You know, if it’s winter and you want to just pretend that you are in the midst of summer. That’s ok too.
- 1/4 cup sugar
- 1/2 cup fresh mint leaves
- 2 cups chopped strawberries
- 4 oz white rum
- 1/2 lemon
- bottle of club soda
- Place the sugar in your cocktail shaker and mash together with the leaves then the strawberries and finally finishing with the rum and lemon. Add ice and shake. Pour into 4, ice filled glasses and top with club soda.
