#SundaySupper: Breakfast for dinner

I’ve had this idea in the back of my head for QUITE some time but it was #SundaySupper that gave me a kick in the butt to make.

A Breakfast Bowl.

An Asian inspired breakfast bowl.

I’ve really been trying to limit my gluten this summer as I’ve just not been feeling quite ‘right’.  For someone with Chrohn’s and Colitis not ‘right’ means I need to reset my system and eat a bit like a caveman.  No wheat, lots of protein and lots of vegetables.  Do this and do it soon or you will be on scary drugs for the rest of your life  OR eat yummy food and be totally fine.

An Asian Breakfast Bowl mean all of my boxes are ticked.  Actually, I could eat this everyday and for every meal.

I made a super, yummy sushi rice added ribbons of carrot, topped it with chopped cilantro and mint and a yummy poached egg.

Have this for dinner, lunch, breakfast-a sneaky snack.  Just have this treat and have it super soon.

Don’t you love it?

I loved it.  Small one loved it and DH loved it and has asked for it a dozen time since.

I’m going to apologize right now to my fellow #SundaySupper ‘ers, I’m going to be late linking up with you all.  I’m right now—camping. Yes, I’m camping (outside and it is supposed to rain all weekend and there might be jello shots involved)  and I will link as soon as possible. Signature

#SundaySupper: Breakfast for dinner
  • 1 cup sushi rice
  • 2 cups water
  • Seasoning for rice:
  • 1 large carrot (shaved into ribbons)
  • 1 T sesame seeds
  • ¼ cup rice vinegar
  • ⅛ cup sugar
  • Garnish:
  • 1 small cucumber chopped
  • 4 poached eggs
  • 1 T each chopped mint and cilantro
  • Optional:
  • a hit of sambal to taste
  1. Cook rice until al dente and add seasonings. Divide between 4 bowls and top with garnish. This is a super, duper treat!

As soon as I get access to the internet and am out of camping pergatory you need to check out my fellow SundaySupper’er’s (yes, I just made that word up).

Normally it would be very socially unacceptable to have wine with your breakfast, but seeing as this is closer to sunset than sunrise, we say go for it!!!

I love this! So true on how the simplest, freshest ingredients can make the best dishes!

You’ll definitely need the jello shots if your camping trip gets rained on. Hell, go for the jello shots even if it doesn’t rain – they always make life better! 😉 This Asian breakfast bowl is awesome. It’s something that Asians do eat – we love rice at all times of day. This looks healthy, yummy and filling – the perfect meal! I hope it helps in resetting your system. One of my BFF’s boyfriend has Chrohn’s and I hate seeing him suffer so much.

Jello shots were totally had-they were hollowed out strawberries with goodies inside-FAB! I’m on the way to getting things on track again. It’ll be all good in a few weeks. Chrohn’s is definatly a bizarre journey.
