I’ve had this idea in the back of my head for QUITE some time but it was #SundaySupper that gave me a kick in the butt to make.
A Breakfast Bowl.
An Asian inspired breakfast bowl.
I’ve really been trying to limit my gluten this summer as I’ve just not been feeling quite ‘right’. For someone with Chrohn’s and Colitis not ‘right’ means I need to reset my system and eat a bit like a caveman. No wheat, lots of protein and lots of vegetables. Do this and do it soon or you will be on scary drugs for the rest of your life OR eat yummy food and be totally fine.
An Asian Breakfast Bowl mean all of my boxes are ticked. Actually, I could eat this everyday and for every meal.
I made a super, yummy sushi rice added ribbons of carrot, topped it with chopped cilantro and mint and a yummy poached egg.
Have this for dinner, lunch, breakfast-a sneaky snack. Just have this treat and have it super soon.
Don’t you love it?
I loved it. Small one loved it and DH loved it and has asked for it a dozen time since.

- 1 cup sushi rice
- 2 cups water
- Seasoning for rice:
- 1 large carrot (shaved into ribbons)
- 1 T sesame seeds
- ¼ cup rice vinegar
- ⅛ cup sugar
- 1 small cucumber chopped
- 4 poached eggs
- 1 T each chopped mint and cilantro
- a hit of sambal to taste
- Cook rice until al dente and add seasonings. Divide between 4 bowls and top with garnish. This is a super, duper treat!
