#SundaySupper: Spice it up

Happy Sunday Supper!

Are you ready to spice things up?

The challenge this week is all about spicy yumminess.

Before I get to the recipe I just want to take a sec to remind you that each week at 7:00 there’s a twitter chat that you can be involved in.  SUPER FUN!

And thanks so much for organizers of #SundaySupper who keep me on my toes and having fun with food each week.

Today is a recipe that I almost feel guilty about sharing-it is almost too easy.

Scallop and Chorizo Skewers

Not only are these quick to put together they also take just minutes to BBQ.

I started by marinating spicy chorizo with fat scallops in lemon juice, paprika, garlic and olive oil.

Don’t leave them any longer than 20 minutes as the acid in the lemon will start the scallops cooking.

I found these fun skewers with double prongs-not necessary but still fun. BBQ on high (don’t forget to preheat the grill or your skewers will stick) for 3 minutes a side.

Do you see something else on there?  What is that green thing?  Green tomatoes!  Chunks of them that allow you a little break from the spice and add a great tang to the whole dish.

Ta do!  Crusty bread, salad and a couple of these yummies and you are set to go.

#SundaySupper: Spice it up
 
Ingredients
  • 2 cups hot chorizo (paprika sausage) cut into ½ inch chunks
  • 2 cups scallops
  • 1 large green tomato (2 inch chunks)
  • juice of 2 lemons
  • 1 heaping T smoked paprika
  • ½ cup olive oil
Instructions
  1. Mix everything together and let sit 15 minutes. Thread onto skewers and bbq on high for 3 minutes a side.

    • Now the green tomatoes are amazing but if you can’t find them a tomatillo would do in a pinch. Can’t wait to see what you’ve been up to your recipes are always amazing!

    • You nailed it! If I didn’t have that rotten shellfish allergy I would have popped some shrimpers on there too.

  7. Scallops have been a relatively recent addition to our food repertoire because I was always afraid to ruin them by over cooking but grilling seems a great solution. I’ll bet the sweet scallops and spicy chorizo are perfect together. I can taste this now, Jane! Also, with the green tomato, your skewers are lovely!

    • I hope you love them, scallops are tricky the first couple of times, just remember to undercook as they keep going even when removed from heat.

  8. OMG…. forget grilling, I’d chuck this in a saute pan for dinner! I’d be way too impatient to wait for the BBQ to heat!

  9. Mmm…girlled chorizo, we eat them here like there´s no tomorrow. With scallops on a skewer, that´s new but sounds delicious!
