Happy, happy Sunday and welcome to to #SundaySupper where the inspiration and good food just never ends.
Today’s theme is crunchy goodness and I decided to be really bad and do some deepfrying. My idea was to put everything I like about my favourite salad, caprese, into a great little bundle.
How could you not be inspired when faced with creamy mozzarella, fresh basil and juicy tomatoes?
I picked-up some eggroll wrappers (if you want-make your own but I like a quick treat and not one where I struggle to get my dough thin enough) that I sliced in half. I find it easiest to make these little babies up if I lay everything out on my counter and make a big batch at a time.
Don’t even worry about wetting the edges, the caprese mix is just wet enough to keep everything together when you give your bundles a good squish. Heat your oil (canola or vegetable works really well) to 350-375 degrees and drop in, cooking until they are lightly browned and float.
A quickly heated marinara sauce to dip and you’ve a great treat.
I had thought that I would freeze a bunch but honestly, they didn’t make it that far. We ate them all up, sharing with our neighbours and enjoying every minute of it.
- 1 pkg eggroll wrappers (cut diagonally in half)
- ⅛ cup olive oil
- 2 large tomatoes chopped (2½ cups)
- ½ cup chopped, fresh basil
- 2 large minced garlic cloves
- 1 cup shredded fresh mozzarella
- ½ tsp coarse pepper
- ¼ tsp sea salt
- Mix filling ingredients together. Place 1 T on each half of eggroll wrap and squeeze edges together. Deep fry in vegetable oil (375 degrees) until just browned and they float to the top.
- Serve with marinara sauce slightly heated.
