Happy, happy Monday and hope that it is warmer where you are than it is here. We’re really being hit with winter cold right now and the only answer is bacon.
Sort of the food version of ‘more cowbell’.
Isn’t it fun to have a recipe that just needs throwing together? One bowl, one spoon but a lot of treats ahead.
I started with lots of mashed bananas and crispy bacon pieces folded into maple syrup, eggs, milk and flour. Divided into 12 muffin cups and baked until firm. I usually make a few extra pieces of bacon on Sunday and secret them away for a recipe like this.
Now these are simple enough that what you really need to do is sprinkle your brow with water (ie sweat) and crash around in the kitchen for far longer than these actually take making these.
- 4 mashed bananas
- 1 egg
- ½ cup milk
- 1 teaspoon baking powder
- ¼ cup crispy fried bacon
- 1 tablespoon melted bacon grease
- ⅓ cup maple syrup
- 3 cups flour
- Mix all the ingredients together until JUST combined. Divide between 12 muffin cups and bake 20 minutes at 350 degrees.
- Serve with extra maple syrup if wanted.
