I know, I know, I’m cheating again.
It’s Monday and there should be muffins but instead I’ve got a great breakfast that is quick to whip-up and honestly I think this is what we’ll have Christmas morning. A full English breakfast, in a bread basket and baked. I used mini casserole dishes but this would be adorable in muffin cups too.

Don’t you find it tough to make eggs for a crowd?
I end-up eating last (if at all) and my eggs are always cold. Cold eggs are not a food that you really want unless they’ve been turned into copious amounts of devilled eggs and served with a great cocktail.
When I lived in England my favourite breakfast was an English fry-up. I had a local caf that was a little hole-in-the-wall. Totally a dive and ugly as all get out but wow-they did an awesome breakfast.
Fried bread, mushrooms, tomatoes and eggs. Dripping with all sorts of bad stuff but so wonderful and served with brown sauce. I’m an ardent, hp girl.
It’s not something you can have often. So I’ve been trying to make a healthier version and I’ve cracked it.
A buttered (sparingly) piece of bread tucked into a muffin cup, break an egg into it and top with sauteed tomatoes and mushrooms.
But what about all that fried flavour? Here’s my trick.
Start by sauteeing cherry tomato (1 tom/person) and mushrooms halves (1/person) in a wee bit of butter, thyme and crushed chillies. When they start to caramelize take them off the heat. In the meantime, cut the crusts off of a piece of bread/person and roll it flat. Butter on both sides and tuck into mini casserole dish (or muffin tin).
Break an egg into each bread basket,
bake for 15 minutes at 375 degrees. Serve with a bit of cheese, brown sauce and enjoy with a big up of java or builder’s tea.
- Here are the instructions for 4 servings;
- 4 halved cherry tomatoes
- 3 halved mushrooms (I really like creminis right now)
- pinch salt and crushed chilli
- 1/4 tsp dried thyme
- 2 tsp for sauteing and more for spreading on bread
- 4 pieces brown bread (crust cut off and rolled flat)
- 4 eggs
- Saute mushrooms and tomatoes with butter, salt and chillies until they are just caramelized. butter both sides of bread and place in muffin cups. Add egg and vegetables and bake for 15 minutes at 375 degrees.
