This has been so much fun to plan for. I HAD to search through a whole raft of Christmas songs and think about all sorts of great treats. I finally decided that Christmas wasn’t Christmas without a dose of a very boozy Dino and an equally tipsy Frank. Gotta have my rat pack.

I’ve been making my own marshmallows for awhile now and each time I do I like to play with the flavours. Before now my favourite were ones full of maple syrup but now I’m in love with these gingerbread ones. Gingerbread flavours in both the candy itself and in the sugar that they are coated in.
The trick is to JUST combine the ingredients and then let everything boil together without touching it again.
At the softball stage you combine the candy syrup with gelatin that you’ve bloomed with water.
Then you beat the dickens out of it until…
Oil a 9×11 pan and pour it in to set for a minimum of 3 hours at room temperature.
Cut the marshmallows into 2 inch squares and toss in gingerbread sugar.

and serve with chocolate and a great glass of port.
- For the marshmallows:
- ¼ cup molasses
- two heaping teaspoon cinnamon
- 1 teaspoon ginger
- pinch each allspice and cloves
- 1 cup corn syrup
- 3 cups sugar
- ¾ cup of water
- In a big pot:
- 4 sachets plain gelatin
- ¾ cup cold water
- To finish the marshmallows:
- 1 cup icing sugar
- two heaping tablespoons cornstarch
- 1 tablespoon cinnamon
- 1½ teaspoons ginger
- pinch each allspice and cloves
- Combine all marshmallow ingredients in a large, heavy pot. Stir to combine (don't stir it again) and heat to a rolling boil. Place a wooden spoon over the top of the pot to avoid boiling over and let burble along until it reaches the soft ball stage. To test either use a candy thermometer or drip a wee bit into a glass of cold water.
- Soften gelatin in water in another large pot and add candy. Beat with an electric mixer until VERY thick. You will think it will never thicken but take heart-12 minutes later it really will.
- Pour into an oiled 9x11 pan and let sit for a minimum of three hours (overnight is good too) at room temperature.
- Combine finishing ingredients together and cut (rolling each in sugar too) marshmallows.
- Great to eat on their own or our favourite-with a bit of port and chocolate.
