It is super lovely weather now and holidays are underway. Each year I think I’m going to get this big breather after school ends but really I spend the first few weeks getting everything done that I’ve let slide for the last month.
I usually also have a couple of big house projects that I want to try and get out of the way. Relaxing is obviously not my best thing.
How about a little cocktail?

I was watching the horse races not to long ago and of course thought of mint juleps. I couldn’t do something the regular way so I decided to make a flavoured syrup.
I took equal parts of sugar and water and let it boil until just starting to thicken before pouring it over a jar full of fresh mint and a few shots of bourbon. I let everything sit for a couple of days.
I really wanted to find those adorable silver derby cups but had to settle for my cute little coffee mugs instead.
Top with ice and fill with champagne.
Add a wee bit more fresh mint and a happy relax is a guarantee.
Have a great start to the summer.
- 3 cups fresh mint
- ½ cup bourbon
- 2 cups water
- 2 cups sugar
- Champagne to top
- Combine sugar and water and boil until thickened (about 15 minutes). Place mint in a jar and top with sugar syrup. Add bourbon and let sit for 24 hours minimum. Place 1 shot of bourbon syrup on a glass and top with champagne. Garnish with more fresh mint.
