Summertime really is time for a good cocktail.
Oh, let’s not fool ourselves-I’m pretty much ready for a cocktail all of the time.
We love Sangria and am always looking for a different way to treat ourselves to it.
The other day I looked on the kitchen island and saw; limes, watermelon, a bottle of wine and mint that small one had snagged from the garden.
Don’t you love when a recipe creates itself?
I took a big jar and filled it with layers of watermelon, limes, and lots of mint. I even used the rind to get a little bit more sour taste to the mix.
A bit of sugar and a VERY healthy shot of rum went in next.
With everything topped-up with red wine and a star anise popped in for good measure.
Pour yourself a glass and take it outside.
- 750 ml light red wine (like a young Malbec)
- 125 ml white rum
- ⅓ cup sugar
- 5 cups cut up watermelon
- 2 limes quartered
- 2 cups fresh mint
- 1 star anise
- Mix all ingredients together and let sit at room temperature for a minimum of 3 hours. Best served over tonnes of ice.
