Happy Bundt Day! Today is all about coconut.
And coconuts make me think of…
If you like Pina Coladas yep, I went there.
I’m literally scarfing some of this cake down as I write. Moist, full of flavour and the kind of treat that gets better after a day when the flavours have time to meld together.
I started with butter, sugar and coconut oil and whipped them until they were fluffy and baby chick yellow.
Fat eggs were added with pineapple juice, crushed pineapple and rum extract.
In the meantime I got my pan ready, or I should say pans. I knew that this was going to be a hit with my family so I doubled the recipe. Am I ever glad I did as otherwise I don’t think I would have gotten a crumb.
Here’s the ‘don’t panic’ warning: when you add the pineapple juice everything will look split and as if the batter has gone horribly wrong. Don’t worry, add in coconut (I love the large flake, toasted stuff) and finally fold your flour and baking powder in.
Fold the silky batter into your bundt and bake until toasty brown. If you can wait, this cake tastes the very best the next day but let’s face it…self-control is severely overrated.
Small one went bonkers over this dish and hardly waited until I was done taking the photo before she spirited away my lovely chunks of coconut.
- ¼ cup coconut flakes
- ½ cup crushed pineapple
- 1 cup sugar
- ½ cup butter
- ½ cup coconut oil
- 2 eggs
- 1 tsp rum extract
- ½ cup crushed pineapple
- ½ cup pineapple juice
- ½ cup coconut flakes
- 2 cup flour
- 2 tsp baking powder
- Place the pineapple and coconut flakes on the bottom of your bundt pan.
- Beat sugar and oils together. Add eggs and beat until fluffy. Add rest of ingredients up to the flour (don't panic-the whole thing will look split-it comes together in the end) and beat. Fold in flour and baking powder.
- Pour into prepared bundt pan and bake at 350 for 35-40 minutes.
