I love a feed of ribs.
They are such a primal thing. The sauce, the bones…you get the idea.
I’m always on the look out for a good rib treat to enjoy and recently DH and I deposited small one at a birthday party and found ourselves with two hours and just fall enough away from home that it wasn’t really worth going all the way there. We did a wee bit of recon and decided to have a snack and a natter. You know, a full conversation without interruption and the ability to complete a whole thought.
In essence, a minor miracle.
We had the tastiest little ribs dripping in a black bean sauce. A bit of a crust on them and gorgeously salty.
These ribs haunted me. I knew they were deepfried but really? It was a fab coating that truly made them.
I decided to forego the deepfrying and instead played with oven frying them. I started by chopping the ribs into manageable eating pieces and tossed them with a bit of oil. Then I made a flour coating with 5 spice, mustard powder, pepper and flour and added it to the ribs.
They already looked and smelled great. I put them in a hot oven and browned them all over.
While they were cooking I mixed-up a black bean sauce with lots of ginger and pineapple juice.
The sauce slathered the ribs and everything went into the oven for a long, slow cook. Now, I’ve made these a couple of times and honestly, the oven is lovely to cook them in but the slowcooker is WAY better. You get even more tender ribs and no babysitting.
Ta da! Even better the next day.
- 3 lbs ribs
- ¾ cup flour
- 1 T mustard powder
- ½ tsp each pepper and Chinese 5 spice
- ¼ cup oil
- ¼ cup brown sugar
- 1 cup black bean sauce
- 1 inch shredded fresh ginger
- ½ cup pineapple juice
- 1 T molasses
- Toss ribs (cut into manageable eating pieces) in oil to coat. Combine flour etc and then coat ribs. Cook in a 390 degree oven for 20 minutes-stirring once partway through so that all the ribs are browned. Meanwhile combine the sauce ingredients and bring to a boil. Pour over the ribs and bake at 350 degrees for 2 hours OR place in slowcooker on low for 6 hours.
