Here’s my next ‘naughty pork chop’ moment with no tutorial photos and just the finished treat. I’ve made this a number of times lately and everyone don’t grab my camera in time. Rats!

Yes, there are people out there that are not squash fans.
I married one.
He’s quickly becoming a convert though with yesterday’s treat, today’s and something really special that I’ll share next week.
This particular soup he commandeered and took to work the a next day. No one even got to taste it until I made it a second time.
I started with a package of butternut squash and a dollop of bacon grease.
Why a package? It was on sale AND I didn’t have to peel this delicious but awkwardly shaped veg. I sauteed it with celeriac (celery root-it’s delicious but REALLY ugly), garlic, cumin, pepper and salt to taste. Add in chicken stock and simmer until vegetables are soft. Blitz with a handblender or blender and season with 2 tsp chopped cilantro.
Top with a few crackers or croutons and make sure you get your fair share of the treat before it is snaffled out of the house.
- 3 cups peeled and cubed butternut squash
- 1½ cups peeled and cubed celeriac
- 3 mashed garlic cloves
- ½ tsp cumin
- 1 tsp pepper
- 1 T bacon fat
- 6 cups chicken stock
- salt to taste
- 2 tsp chopped cilantro (I used the squeezy stuff from Gourmet Garden)
- Saute vegetables and garlic in bacon fat, add seasonings and chicken stock. Simmer until vegetables are softened and blitz until smooth. Season with cilantro and enjoy.
