Jamaican Cottage Pie (aka Jamaican Shepherd’s Pie)
I know, it just doesn’t sound very basic BUT it’s more the method that is basic than the flavours that I’ve added this time.
I think everyone should have a good cottage pie recipe in their back pocket. It’s more the method than the actual pie. Lush meat (or I’ve made a veg version with soy ground and it was just as good), slightly thickened into a gravy with lots of vegetables and topped with an embarrassing amount of mashed potatoes.
You can’t really go wrong.
In this case I had a terrible hankering for Jamaican Patties but didn’t feel like playing with pastry.
Mashing things up?
Yep I could do that.
Do yourself a favour and make a double batch of this dish and freeze one.
Your future self will thank you and love you to the moon and back.
Just like a regular cottage pie I started with ground beef, onions, garlic, ginger, curry paste, thyme, allspice and tumeric and a big, heavy pot.
I added a bit of flour and thickened everything up with a bit of beef broth. I always add in peas right at the end and it’s yummy all on its own.
The best part though? The topping. Mashed plantains mixed with: a dollop of bacon fat (use butter if you don’t obsessively keep your bacon fat), cooked potatoes, curry paste, egg, tumeric…loveliness.
Top and bake.
The kind of dinner that you that you’ll love to come home to.
