We love a cup of tea right after school.
Small one takes out her homework and I get down to the business of making dinner and getting ready for the next day.
She’s always starving at this point and has now taken to asking my ‘what’s for tea?’ as soon as I pick her up from school.
Needless to say, I’ve been making a lot of loaves.
Well, they are: usually made in one bowl, use what I have in the house AND lend themselves really well to the ‘help’ that I have on hand.
This one is a huge fav; Date and Chocolate Loaf.
Start with; chopped date, cinnamon, cloves, chocolate chunks, yoghurt, eggs and a bit of sugar.
Fold in baking powder and flour and you are off to the races.
This recipe make TWO loaves which lasts us at least a couple of days.
- 2 cups plain yogurt
- 1 tsp vanilla
- 1 cup chopped dates
- 1 cup dark chocolate chunks
- 3 eggs
- ⅔ cup sugar
- pinch cloves
- 1 tsp cinnamon
- 2 cups flour
- ¼ cup oatmeal
- 2 tsp baking powder
- Mix all the ingredients (except the flour, oatmeal and baking powder) together. Fold in the flour, oatmeal and baking powder and divide into two, greased loaf pans (or 24 muffins). Bake at 350 for 35-40 minutes or until a knife comes out cleanly.
