Happy Saturday and I hope that you are full of amazing brunch ideas. I’m going to start this post with a tiny departure but think an important one. Why now and here? It’s super topical and with Mother’s Day tomorrow you really feel for folks going through a rough time.
We’re hoping for a tiny bit of sun at some point this weekend and a little bit of heat.
We’ve had months worth of rain in a short period of time and it would be a blessing for some folks in our area (Ottawa-Gatineau) to see what state their houses have been left in. If you are interested in donating to flooding relief the Red Cross has a multitude of ways for you to help.
And now back to lovely food.
How about popovers?
Light, fluffy, gorgeously naughty and ready to accept any flavour that you want to add to them.
I’ve chosen herbs and cheese for these lovelies. These are so simple to mix up and use what you have in the house.
A few minutes in the oven and eggs, flour and milk turn into THESE!

- ½ cup chopped herbs (I used a mix of chives, parsley and basil)
- 4 eggs
- 2 cups milk
- 2 cups flour
- 1 cup alpine cheese (grated)
- ½ tsp pepper (less if you don't like the spice)
- ¼ tsp salt
- 6 T olive oil
- Beat all of the ingredients (except the cheese) together until frothy. Let sit to reach room temperature and beat again.
- Heat popover (or muffin tin) with 1 tsp oil in each cup at 375 until almost smoking (2 minutes).
- Pour in the batter and top with cheese.
- Close the oven door softly and let puff up and brown. (approx. 15 minutes)
