Yay! A way to brighten the middle of the week.
Hanging out with lovely bloggers and chatting about fab food. Not just fab food but food that is meant to be savoured and lingered over. Taken slowly and enjoyed with catch-ups and conversation.
Muffins are a perfect addition. Made small (they have no calories then) or large (eaten with chunks of butter and cheese) they can be grabbed to accompany that third cup of java.
I’ve been trying to make these particular muffins for years.
Every since my husband and I met he’s talked about these perfect cheese muffins that the mom of a friend made him as a teenager.
He’s described the ingredients, eaten tonnes of versions and yet I’ve never gotten them ‘quite the same’. Grrr.
I cracked them. After 20 years. I might as well retire at this point.
They are full of sharp and mild cheese, oatmeal, beer and spice. Now, I used Cabot and they are sponsors of the week but I actually purchased my Cabot on my own. It’s my first choice all the time.
Don’t fret, the beer makes the batter super bubbly and a little odd in the colour department. It’ll all come right in the end.
A bit of a bake and extra coffee with chunks of raw sugar sweetening it and you’ve got a new family favourite.
- 2 cups flour
- 2 cups shredded cheese (I like a super old and marble mix)
- ½ cup oatmeal
- ½ tsp dried mustard
- ⅛ cup sugar
- 2 tsp baking powder
- 1 tsp worstershire
- 2 eggs
- 1 bottle of beer (with or without alcohol-you just want the hoppy taste)
- Mix dry ingredients together, ensuring the cheese strands are well coated. Fold in the wet ingredients and bake until golden. (350 for 15-20 minutes)
